Pork Fillet in Parma Ham

This is one of those dishes that Tom just loves to cook. He prepares the pork in advance and leaves it in the fridge, ready to cook at the last minute. The same is true of the delicious (rich) sauce. It gives him time to focus on his current complex case, knowing the hard work is done.
