Linguine Amatriciana

At a time when tomatoes are at their most plentiful, this is an easy dish, but it takes a bit of time to really develop the flavours.


The tomatoes are roasted first to become sticky and sweet, and they - with the other simple ingredients - spend quite a while in a pan. But it's worth it!


And if you have a glut of tomatoes, you can make this and freeze, or even put it into jars. If sealed correctly, they will last for months.
