Lemon and Basil Risotto


Tom loves making risotto. It feels great to stand there, gently stirring the rice, watching it develop before your eyes. And the smell of the shallot and the garlic cooking, then simmering with the wind. This is just one of his favourite risottos, and so very simple to make. Sometimes he leaves it just as it is, with a few parmesan shavings. At other times he marinates some prawns in lemon and garlic, and then griddles them. Wild salmon is another favourite addition.

But for the risotto alone, you need just a few ingredients, and about 25 minutes. Take your time and enjoy the process. The food will taste all the better for it.
