A great dish for a dinner party! The trick is getting the fillet cooked to perfection - or perfect the way YOU like it. It's hard to give definitive cooking times, because it depends how thick the piece is, so you'll have to use your judgement. Enjoy with crispy potatoes, as shown here, or even pommes dauphinoise - my favourite!
